“Grumble, grumble,” mumbled Baba. “Guess I’ll have to go to Sweet Pea’s Restaurant to get some zucchini pie.”
Recipe for Zucchini Pie
One 8-ounce can of refrigerator crescent rolls
3/4 cup cashews
3 medium zucchini, sliced in thin rounds
1 clove garlic
1/4 tsp salt
1/4 tsp dill weed
1/4 tsp pepper
2 eggs, beaten
1 cup cubed Monterey Jack cheese
2 tsp chopped parsley
Crust:
Separate crescent rolls and press in 10-inch pie plate.
Sprinkle cashews over crust.
Filling:
Saute zucchini in a little butter until light brown.
Add garlic and seasonings. Mix well.
Spread zucchini mixture in pie shell.
Pour eggs over zucchini.
Top with cheese and sprinkle with parsley.
Bake:
325 degree oven – 45 min or until golden brown.
Serves 8 very happy people.
